I wanted to make dorayaki for the kids’ afternoon snack yesterday, but was rather lazy to make the dorayaki mix from scratch. I cheated a little and used pancake mix, adding honey, eggs and milk. I will post this cheater’s guide after I tweak the recipe a little on my next try.
I would also brown the dorayaki pancakes a little longer, guess I was impatient and flipped them too quickly this time round. Do remember to lightly oil the pan in between making each pancake.
Since dorayaki is Doraemon’s favourite snack, what better design to draw on the dorayaki than Doraemon? I used melted chocolate to draw on a quick design before handing it over to the kids.
I filled the pancakes with tsubushian (sweet red bean paste where the beans were mashed for a slightly chunkier texture). The next time I try this I will likely try some chocolate custard filling instead.
Although this did not turn out as nicely as I hoped, the consolation was that the kids liked it. Phew!
