I found this yummy recipe to make cream of broccoli soup, and it sure is tasty! I decorated the soup as Keroppi, with dollops of sour cream as the eyes.
Recipe from All Recipes:
(I downsized it to two servings and skipped the celery)
- 2 tsp butter
- 3/8 onion
- 1 cup chicken broth
- 2 cups broccoli florets
- 1 tbsp butter
- 1 tbsp all purpose flour
- 2/3 cup milk
- black pepper for seasoning
- Melt 2 tsp butter in a stock pot, and saute onion until tender. Add broccoli and broth, cover and simmer for 10 minutes.
- Let the soup cool slightly, and use a stick blender to blend til the soup is slightly chunky. I prefer not to blend til it is totally smooth as I prefer a slightly chunkier soup for this.
- In small saucepan, over medium-heat melt 1 tbsp butter, stir in flour and add milk. Stir until thick and bubbly, and add to soup. Season with pepper and serve.
