Made some pumpkin soup for lunch the other day and lucky the kids liked it *phew*. I cut some tortilla wraps into Cinnamoroll and placed it on top of the soup together with some spring onions.
Cinnamoroll is this fluffy white puppy from Sanrio, I always thought he looks rather cute.
Recipe for pumpkin soup (original recipe here)
- 1 tbsp olive oil
- 1 onion, chopped
- 0.8kg butternut pumpkin, peeled, seeded and chopped
- 1 litre chicken stock
- clove of garlic
- black pepper to taste
- 1 tsp sugar
1. Heat the olive oil in a saucepan, then add garlic and onion, and stirfry til onions are golden and fragrant.
2. Add pumpkin and stir to coat. Add the stock and let simmer for 20-25 minutes until pumpkin is softened.
3. Let it cool slightly and blend the soup until smooth.
