I made macarons the other night and decorated some with the Batman logo.
These macarons were filled with lime curd. I had wanted to make lemon curd but the supermarket was out of lemons! So I grabbed a bag of Tahiti limes instead and found this yummy lime curd recipe online. So delicious that I licked the spoon clean after I was done stirring it over the stove!

Recipe for lime curd (I halved the recipe, find the original recipe here)
- half cup sugar
- 1/8 cup butter (about 28 grams)
- 1/2 cup fresh lime juice
- 1 tbsp lime zest (I prefer more zest for stronger lime flavour)
- 1 egg, beaten
Heat sugar, butter, lime juice and lime zest over a double boiler until the butter has melted.
Turn down the heat such that the water in the pot is reduced to a simmer. Add in the beaten egg a tablespoon at a time, stirring consistently. Make sure the double boiler is not too hot else you would end up with bits of cooked egg!
Stir for about 20 minutes or so, or until mixture thickens and coats the back of a wooden spoon. Cover the curd with cling wrap while it cools to prevent a skin from forming.
